I wouldn't say one god so much as their interpretation and understanding of god. They are monotheistic but fail to understand that by their definition of god, they are representing Elohim. Which in its plurality has more of a representation of an Office of Deified Leadership.
Like we have a President, Vice President, and Cabinet. Much the same, Elohim represents the office of the Most High. That is the Holy Spirit, Yah, and Yahushua, as well as (as far as I know and can very well be wrong) the archangels.
This is a cursory look at the texts as well as 1st Enoch, but much understanding to this point is that God is Christianity's attempt to reconcile the monotheistic idea of a single deity for fear of being pantheistic, which was the predominant culture of the time (and on to today)
