My wife prepares âPoor manâs caviarâ Friday afternoon before Shabbat starts. It is a mix of many different vegetables, vinegar, and other stuff she puts in it (To be completely honest, I have no idea what else!). We refrigerate it and then eat it with tortilla chips Friday evening and during the day Saturday as a snack.
Our fave snack at the moment we call âShabbat sweet nutsâ!
2 tbsp coconut sugar
1/2 tsp cinnamon
2 tbsp maple syrup
1/4 tsp fine Himalayan pink salt (or other good quality salt)
2 tsp organic coconut oil
2 cups raw nuts (I use a mixture of pecans, macadamias, cashews and almonds)
Line a baking sheet with parchment paper and put aside.
Mix coconut sugar, cinnamon and maple syrup in small bowl.
Melt coconut oil in frying pan (skillet for you âmericans!) on med-low heat and then add the coconut sugar mixture and stir until smooth.
Add the nuts and increase the heat to medium, stirring to coat the nuts. Then stir occasionally to let the nuts soak in the goodness, usually around 3-5 mins. Once the nuts are sticking together like toffee, remove from the heat and pour onto the parchment lined baking sheet and pop on wire rack to cool. Let them sit there for an hour (if you can... I canât!) and then break apart into pieces.
Warning: very very morish...! I highly recommend doubling the recipe (although you will need to fry for a bit longer). I have been known to keep a secret stash. My husband requests his own jar full.

The night before I like to make chia pudding to have for breakfast the next day. My daughter's favorite is strawberry short cake chia pudding. It is super easy to prepare and it makes for a healthy, scrumptious, no effort breakfast :)

We are mostly vegan so it is a lot easier for us not to cook on Shabbat.
